About the Recipe

Baked Oats are a perfect warm and filling breakfast. This is one of the most popular flavour-baked oat recipes, and it is often used for a dessert – it feels that special.
Ingredients
40g oats
175g fat-free natural yoghurt
1 teaspoon of vanilla extract
¾ tablespoon granulated sweetener
Grated zest and juice of ½ lemon
2 medium eggs (or 1 medium egg if you prefer a slightly drier texture)
50g blueberries
Preparation
Step 1
Preheat the oven to 200°C (fan 180°C /gas mark 6)
Step 2
Put all the ingredients into a bowl, keeping back a quarter of the blueberries, and stir until combined. Pour into a small ovenproof dish and place the remaining blueberries on top.
Step 3
Place on a baking tray, so you end up with a messy oven if it rises a bit too much, and bake for 35-40 minutes.
Step 4
Remove from the oven and serve warm.
TIP
You can cover and freeze the baked oats when they have cooked. Simply reheat from frozen gently in the microwave.
